
Peanut Butter Cookie Sandwiches
Keeps for up to 2 days and are very sweet!
- 1 1/4 cup flour
- 1/2 tsp baking powder
- 1/8 tsp salt
- 8 tbsp butter
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
- 1/2 cup peanut butter
Filling:
- 1/2 cup peanut butter
- 2 tbsp butter
- 1 cup confectioner's sugar
- 1 tsp vanilla
- 3 tbsp milk
- Cookies: Whisk flour, powder and salt in small bowl. Beat butter, peanut butter and sugar in medium bowl on high till fluffy. Beat in egg and vanilla. Reduce speed to low and beat in flour mixture.
- Form dough into tbsp size balls and place 2 inches apart on ungreased sheet. Press with a fork for crosshatch pattern.
- After 15 minutes of bake time @ 350 degrees, remove and cool.
- Filling: Beat peanut butter in small bowl on low. Add confectioner's sugar till crumbly. Mix in vanilla and milk for a thick spread.
- Sandwich 2 cookies with spread.
Oatmeal Cranberry Cookies
Stores for 5 days
- 1/2 cup flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 10 tbsp butter
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla
- 2 cups old fashioned rolled oats
- 1 cup dried cranberries
- Whisk flour, baking powder and salt in small bowl and set aside. Mix butter and sugar in medium bowl on high till fluffy. Beat in egg and vanilla and mix in flour on low. Stir in oatmeal and berries.
- Drop tbsp of dough onto ungreased sheets and bake @ 350 degrees for 15 minutes.
