  • 2lbs potatoes peeled and cubed
  • Salt and pepper
  • 1 tbsp olive oil
  • 1 1/2 lbs ground turkey
  • 1 carrot peeled and chopped
  • 3 celery sticks chopped
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 can beef stock
  • 2 tbsp sour cream
  • 1 egg yolk
  • 1 tsp paprika
  • 2tbsp parsley
  1. Boil potatoes in pot with salt till tender.
  2. In the meantime, heat a skillet on medium high with oil.  Add turkey, salt and pepper, and brown it.
  3. Add carrot and celery for 5 minutes.
  4. In a small bowl mix butter, flour and 1 cup of broth.  Add mix to skillet and stir till thickened.
  5. Drain potatoes and mash in sour cream, yolk and remaining broth.
  6. Fill a small casserole dish with meat mix and top with potatoes.  Sprinkle with paprika and parsley.
  7. Broil for 3 minutes on high till browned.

Serves 4 and takes less then 30 minutes!
