- 2lbs potatoes peeled and cubed
- Salt and pepper
- 1 tbsp olive oil
- 1 1/2 lbs ground turkey
- 1 carrot peeled and chopped
- 3 celery sticks chopped
- 2 tbsp butter
- 2 tbsp flour
- 1 can beef stock
- 2 tbsp sour cream
- 1 egg yolk
- 1 tsp paprika
- 2tbsp parsley
- Boil potatoes in pot with salt till tender.
- In the meantime, heat a skillet on medium high with oil. Add turkey, salt and pepper, and brown it.
- Add carrot and celery for 5 minutes.
- In a small bowl mix butter, flour and 1 cup of broth. Add mix to skillet and stir till thickened.
- Drain potatoes and mash in sour cream, yolk and remaining broth.
- Fill a small casserole dish with meat mix and top with potatoes. Sprinkle with paprika and parsley.
- Broil for 3 minutes on high till browned.
Serves 4 and takes less then 30 minutes!
